Ingredients

Base

  • 200g digestive biscuits (crushed)
  • 100g melted butter

Filling

  • 600g cream cheese
  • 150g caster sugar
  • 3 eggs
  • 1 tsp vanilla extract (or vanilla bean paste)
  • 200ml double cream
  • 1 tbsp plain flour

Topping

  • Fruits / Berries as

Method

  1. Mix crushed biscuits with melted butter and press into a lined tin. Chill for 30 minutes.
  2. Beat cream cheese and sugar until smooth.
  3. Add eggs one at a time, then vanilla, cream, and flour.
  4. Pour over base and smooth the top.
  5. Bake at 160°C for 50–60 minutes until set with a slight wobble.
  6. Cool slowly, then chill for at least 4 hours before serving.
